Keeping a scientific notebook is a great way to non-verbally document STEM learning.  What are other non-verbal methods - such as creating videos, etc., -  have you used in your program?  
I love the idea of having the students work on journals through out the activities releated to STEAM. It helps the students keep track and we can reflect at the end of the day or at the end of the activity what each of them student saw and what they thought of it.
